5 Delicious Pancake Recipes to try this Pancake Day!

Shrove Tuesday, more popularly known as pancake day, is fast approaching since it falls on Tuesday 16th February this year, and once again the big pancake debate will be sure to raise its head. Are you sweet or savoury? Classic lemon and sugar or chocolate overload? Who the best pancake flipper really is!? But however you choose to eat your pancakes there is no denying that they are totally delicious and having a day dedicated to eating them is a win win right? 


But with so many delicious recipes floating about online and in our recipes books it can be hard to decide the route to go way it comes to making your pancakes. So, in this post I have rounded up 5 delicious pancake recipe ideas from indulgent and decedent to those perfect for people following a diet plan or watching their waistlines.

Ombre Fluffy American Style Berry Pancakes


This Ombré pancake stack is achieved by using a classic American fluffy pancake recipe and adding blitzed berries to the mixture. The perfect fluffy rounds are great for stacking tall and piling high with Greek yoghurt and fruit toppings. Whilst this image shows blackberries, blueberries and raspberries, the great thing about this recipe is you can add or change the fruit you mix into your pancakes. You could create a whole host of different flavours, perhaps you could even create a rainbow stack using different fruit flavours!

Chocolate, Coconut and Banana Pancakes


Chocolate, coconut and banana sounds like a delicious flavour combo right? Well how about popping all of those delicious flavours into a pancake!? These delicious pancakes are packed full of big flavours but are actually relatively healthy too. These pancakes actually contain no flour, milk or refined sugar and instead use products such as raw coconut oil and raw cacao powder to create a crepe like pancake that is full of flavour.

Blackforest Protein Pancakes


If you are looking for a pancake recipe that tastes delicious but is low carb too then this recipe might just be for you! These delicious black forest pancakes are not only low carb, but they contain no added sugar and can be made mostly using things you would like to have hanging around your kitchen anyway. Of course, not everyone will have protein powder but if you are wanting to try these it can be picked up at most health food shops and even supermarkets now. Or you could try changing up the flavours by adding a different flavoured protein powder in too.

Lemon and Poppyseed Pancakes


These lemon and poppy seed pancakes take that classic lemon and sugar pancake topping combination, flip it and create a deliciously light crepe like pancake that offers a great twist on those traditional flavours. The poppy seeds add an extra crunchy texture to these pancakes whilst their sweet and tangy pair perfectly with the lemon, this combo is a definite must try this pancake day.

Raspberry Choc Chip Pancake Muffins


If your kids are anything like mine as soon as they realise it's pancake day, they want pancakes for every meal of the day! These raspberry choc chip muffins are a great twist on the traditional pancake shape and are perfect for breakfast or even dessert! This pancake recipe used Greek Yogurt to not only add extra protein, but it also makes these pancake muffins super light and fluffy too. If raspberries and choc chips aren't your thing you could try experimenting with different flavours too and it is a great recipe for the kids to get involved with trying too.

There are also a few other fab recipes that I just had to share including a vegan, eggless pancake recipe from Laura over at "Savings4SavvyMums". The pancakes look totally delicious and work out at around 56p per batch so a great cost too! Or if you have little ones who might be getting their first taste of pancakes this year, these banana and spinach pancakes from Nicola over at "Mummy to Dex" are perfect for baby led weaning and really nutritious too.
